quiche for dinner

I posted awhile back that we made quiche for dinner on Valentine’s Day, and promised you all a recipe! So, here it is!

This recipe originally came from allrecipes.com. I modified it to fit my tastes.


Ingredients:
2 Tablespoons butter
1 tsp minced garlic
2 cups chopped broccoli*
4 strips cooked bacon
1 (9 inch) unbaked pie crust*
1/2 cup shredded cheese*
5 eggs, well beaten*
1/2  cup milk
1 tsp salt
½ tsp black pepper
1 Tablespoon butter, melted

Instructions:
1. Preheat oven to 375 degrees.

2. Over medium-low heat, melt butter (the 2 TBSP) in a large saucepan. Add garlic and broccoli. (If you are adding any other veggies, now would be the time to add them as well.) Cook slowly, stirring occasionally until veggies are soft. Spoon into the pie crust and sprinkle with cheese and bacon.

3. Combine eggs and milk. Beat well, even though eggs should already be beaten. Add salt and pepper. Stir in melted butter (the 1 TBSP) and pour into crust over vegetables and cheese.

4. Bake in the preheated oven for 30 minutes, or until the center has set.

My notes:
* Frozen will work, but fresh broccoli is really better.
* If your pie crust is smaller, reduce the ingredients slightly, as you do not want to overflow it. (on the other hand, if your pie crust/pan is larger, increase the eggs and milk to fill the whole crust)
* The kind of cheese is up to you – I used Colby Jack this time.
* I substituted 3 full eggs and 3 egg whites, to cut the cholesterol a little.

The beauty of a quiche is that you can put ANYTHING in it. The one I made was pretty light on the veggies, but you can add anything. (Suggestions: green pepper, onion, ham, sausage, different kinds of cheese)
