pork with potatoes and apples

This recipe is one of the first dinners I ever made for Alex, so it is always a little nostalgic to make it! It's a great recipe and we always enjoy it.

Pork with Potatoes and Apples
pork roast or pork tenderloin
2 Tbsp olive oil
2 Tbsp dried rosemary
1 onion (optional)
3 potatoes
3 apples
salt and pepper

1. Preheat oven to 450 degrees.
2. Salt and pepper the pork. Heat the oil and 1 tsp of the rosemary in a skillet on the stove and add pork. Turn to coat Arrange onion around the meat, and cook til lightly browned.
3. Transfer the pork and onions to a glass pan and put it in the oven and set a timer for 30 minutes.
4. Cube and boil the potatoes for 5 minutes. Drain, toss with olive oil, rosemary, and garlic powder (optional) and arrange around the meat.
5. After the 30 minute timer goes off, arrange the apple, also tossed in oil and rosemary, around the meat and cook for 15 more minutes.

Note: Cook in the oven longer for a bigger piece of pork, and increase apples and potatoes as desired.

meat on sale

If there's one thing I can't resist, it's meat that is on sale. I went to the grocery store the other day for a pork shoulder to make pulled pork with and they only had half shoulders. And...they were on sale!

I normally would have just bought one, since half a pork shoulder makes more than enough pulled pork for two people...but since they were on sale I bought three! I froze the extra two.

In total, I saved  $5.42.

Hey, it's not like I won't use them!

scallops and pork

I tackled scallops for dinner the other night. I've never made them, and I don't really like them, but Alex likes them a lot! I made scallops, pork, potatoes, and apples...all grilled on my electric griddle. They were originally meant to be kabobs, but they weren't cooking evenly on the kabob sticks!

I seasoned the pork, apples, and potatoes like I always do - some salt and pepper, rosemary, a little bit of thyme.

I thawed the scallops and let them marinate in an 'herb butter' for about 30 minutes before I cooked them. I found the recipe for the butter online, it was just butter mixed with some thyme and sage.

The scallops were supposed to be bacon wrapped, but they were too small to get the bacon around! So, they turned into 'scallops on a bed of bacon' instead!

Overall it was pretty good!
