parade of lights


This year, we went to the parade of lights in downtown Denver. The weather was beautiful - just over 40 degrees and not cold at all. The parade was short, about an hour, which was perfect.



After the parade, we walked down to the end of the 16th street mall to see the government building all lit up for the holidays.




The parade of lights is free to watch, so all we had to pay for was parking for a great evening!

100 apologies!

Obviously, a slew of apologies is in order. I realize I have been pretty MIA the last couple months, and I don't have a great excuse, but I'll try to explain anyway.

I've had a crazy couple of months...so here's a cliff notes version update.

1. Our laptop decided it was done working, so we were down to just one computer for both Alex and I. (And his computer is a little glitchy and a little buggy...so not the most reliable mode of blogging!)

2. P90x has taking up A LOT of time. When we started, I didn't anticipate my free time being brought down to zero, as most of it has been taken up by the longer than an hour workout and time consuming meal planning.

3. CHRISTMAS! I know everyone has been busy because of the holiday season, and I was no exception. But, I did a lot of fun things and have a lot to tell you all about. (So expect the next few posts to be Christmas-related!)

turkey bacon and more turkey bacon

Since we need to eat so much protein, turkey bacon has been an easy and relatively cheap way to get it. Every week we cook a few packages of turkey bacon in the oven, and bag it up for easy access during the week.

dinner - fish and veggies


On our p90x diet, most dinners consist of a protein, a veggie, and sometimes a diary. We bought a big bag of Tilapia to add some variety to the pounds of turkey bacon we eat, so I've been working on cooking that.

This piece I just did on the stove, seasoning it with some garlic and oregano.

Not my favorite, I think I need to find a new method.

happy thanksgiving!

HAPPY THANKSGIVING ALL!

We decided that this year we weren't going to go anywhere or do anything - being so far away from family makes it difficult and expensive to meet up with family.

Doing p90x, our Thanksgiving meal will not be as fancy as it normally would be, but I'll keep you posted on what I made!

Since it is Thanksgiving, I'm cheating on the p90x diet just a little and having a cup of coffee. A cup of coffee and relaxing while dinner is in the crockpot. Doesn't get any better than that. :)

p90x food poster


We made this poster to help us keep track of what we could eat and what counted in each category. It's a little hard to see, but there are categories for fat, protein, carb, veggie, fruit, dairy, snacks, and condiments. It's been a big help as I pack a lunch in the morning!
